Recipe: Perfect Vegan Guacamole

This week, we’re sharing a recipe for healthy guacamole, a dip that’s ready in minutes and has fresh summer flavours that will give you a boost even in the dead of winter!

Avocados are a great and nutritious addition to a vegan diet. They’re packed with potassium, protein, fibre and vitamin K, and they also contain monounsaturated fat, which is thought to help lower cholesterol. And, of course, they’re also really, really tasty.

Guacamole

Perfect Vegan Guacamole

4 medium, very ripe Haas avocados, peeled and minced

1/2 cup quartered cherry tomatoes

1/4 cup finely diced red onion

1/4 cup chopped fresh coriander

1 Tbsp. fresh lime juice

1 garlic clove, minced

1 tsp. sea salt

1 pinch chilli powder (optional)

  • Mash all the ingredients together in a large bowl with a potato masher or whisk until well combined.
  • Garnish with tortilla chips and serve as a dinner party starter, have it as a healthy snack with carrots and celery sticks, slap it in a sandwich or eat it with vegan chilli and rice as part of a mouthwatering Mexican feast.

Makes 3 1/2 cups
